Papua New Guinea

Located in the South Pacific just north of Australia, Papua New Guinea (PNG) occupies the eastern half of the island of New Guinea. It is one of the least explored places left on earth, with dense rainforests, rugged mountains, and many diverse indigenous people (with over 800 languages spoken).

It has been estimated that 40% of the PNG population derives income from coffee farming. Depending on the year and harvest conditions PNG estate coffees range from pleasant to splendid.

PNG has been a favorite of ours for many years, unlike other Indonesian coffees it shares traits with the Central American and African coffees. During the month of January we are featuring the PNG Arokara Estate coffee grown in the Eastern Highlands, these 100% Arabica coffee beans are grown above 1500m above sea level.

You will find a wonderfully fragrant coffee in the grinder with a nice brightness, medium body and mild fruitiness with subtle hints of chocolate in the cup.

Fragrance-As a specialized term in cupping, or sensory evaluation of coffee, fragrance describes the scent of dry coffee immediately after it has been ground, but before it is brewed.

BodyBody or mouth feel is the sense of heaviness, richness and thickness at the back of the tongue when you swish the coffee around your mouth.

 


Make Something With Coffee & Chocolate

A delightful treat for chocolate & coffee lovers.

In a sauce pan, heat a cup of sugar, a 1/4 teaspoon salt, 1 1/2 sticks butter. Add a teaspoon of vanilla and 4 oz. of chopped, semi-sweet chocolate (Great Lakes Milk Chocolate Melting Chips from your local Great Lakes makes a good substitution here), stir until well melted.

Add a tablespoon of your favorite finely-ground Great Lakes coffee.

Stir until well mixed, then transfer everything into a mixing bowl and let cool for a few minutes. While still warm, fold in three eggs, a cup of flour and pour the mixture into a baking pan.

Bake 30 min. @350 F or until done and set out to cool.
